Weekend Cooking: Raw Apple Cake


Years ago, my sister gave me a recipe for Raw Apple Cake. It came from the Four Sisters Inn Cookbook -a souvenir from her California Wine Country vacation. Since then, this cake has come to signal the beginning of fall for my family. Yesterday we hosted a dinner party and, by coincidence, served the raw apple cake on the real first day of fall. It was just a good as we remembered!

Raw Apple Cake
(from Four Sisters Inn Cookbook)

4 cups grated tart apples, firmly packed
1/4 cup oil
2 teaspoons vanilla
2 eggs
3/4 cup sugar
1/2 cup brown sugar
1 cup flour
1 cup wheat flour
1 teaspoon cinnamon
2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped nuts (optional)


Preheat oven to 350 degrees.

In a large bowl, mix apples, oil, vanilla, eggs, and sugars.  In a separate bowl, stir together flours, cinnamon, baking soda, salt, and nuts. Gently fold into the apple mixture and stir until moistened. Pour into a lightly greased 9 x 13 pan.

Bake at 350 degrees for 45 minutes.

Serve with whipped cream or vanilla ice cream.

  1. Hmmmm. I mean, mmmmmmmmmmm. I have all the ingredients, and I've hankering for apple cake. Maybe this is all I need to make this humid, icky day feel like the second day of fall? Probably!

  4. I have some apples I was going to turn into applesauce tomorrow. Hummmmm. With a food processor fitted with a grating disk, this recipe would take no time at all to make.

  6. See, if only there was an apple-picking season in Florida. For us it is "really sweaty" season, or pretty soon just "sweaty" season. But I can always get apples at the store and do it anyway. This sounds SO GOOOOOOOD!

  7. I have many apple cake recipes and am always happy to have another one. We go apple picking at least twice in the fall, and I usually buy too many, lol.

  11. I used to make a raw apple cake but it was lost some where along the way. I agree that an applie cake is a great way to welcome the Fall season. I'm going to give this a try.

  15. Now that looks really delicious. Here in Lanzarote it’s difficult to get what we call ‘cooking’ apples and friends bring them over from UK. Next chance I get I’ll be trying this.

    Nan - I know you always use butter! I'm sure this cake would taste even better that way... why dont I ever think to substitute?

    Trish - I always wondered why it wasn't just called 'apple cake'... maybe raw because you put in grated raw apples? I like to use Cortland apples for baking and pies, but my sister swears by Ida Red.
