Weekend Cooking: Turkey Stuffed Peppers

It's been more than a decade since I last made stuffed peppers - probably because my husband doesn't love them and at least one of the girls was going through a picky eating phase - but when this recipe for turkey stuffed peppers popped up on Pinterest (via skinnytaste.com), I knew it was time to try again.

Using a combination of red and orange peppers, wild rice, and choosing cilantro over parsley when given the option, I followed the recipe exactly as written. The rice was prepared ahead to cut down on prep time.

Paired with a spinach salad, this was an easy meal, but slightly bland. It tasted better after adding some salt and pepper. The next time I may even splash on the hot sauce!

  2. I'm not a stuffed pepper fan either, but I love roasted peppers, so there's got to be a problem with the recipes I try. Or maybe it's the liquid in the pan that steams the peppers instead of roasting them. Hmmmm.

  3. Everything (almost) is better with hot sauce! I love stuffed peppers but haven't made them in a while. I might give this one a try and up the spices.

  4. I am not a big fan of stuffed peppers, I wish I was because they look delicious and I agree, so many things are tastier with hot sauce.

  7. I love stuffed peppers. When we still ate meat we would use minced meat, now we mainly use rice and soy flakes which stands in for the minced meat.

  10. I think the last time I had this type of dish, green peppers were used and the cooking made them bitter. I will have to try a grain version in the summer when the cost of the peppers is more reasonable.

  14. My stuffed peppers are pretty bland, but they also seem like comfort food, so I still make them now and then. Had not thought of using turkey.

  15. Huh. My husband usually does the cooking in my house but I offered to whip up dinner on Thursday and he suggested stuffed peppers. (Of course I do not want to make his suggestion! I want to surprise him with something exotic.) but you post this and now I suppose I will go ahead and attempt. THANKS!
